Baked turkey or chicken meatballs

I know how much you love meatballs, and we really like them! I prepare them quite often, the fried version is of course the best but not the healthiest, so I tried all kinds of variants in the oven but they always seem to come out somewhat dry, especially those with pork. Likewise the ones with chicken or turkey seem to be too dry and hard (at least that's how it turned out for me) But the search for recipes for soft and tasty meatballs has stopped because my dears have discovered a variant of meatballs so good that you won't believe it. Not because of the meat in the content but because of a simple ingredient that makes them so juicy and tender, namely zucchini.

Baked turkey or chicken meatballs are an absolutely delicious dish, they are soft, they are tender, they are tasty! Another plus is that they can all be baked at once and you have no problems with the cooking time, simply mix the ingredients, form the meatballs and then put them in the pan. From here the oven does its job while you can prepare the garnish.

They can be prepared as you see in the title with both chicken and turkey, the taste is excellent. I think they can be made with pork, I will experiment soon and of course I will write to you.

In the initial recipe is added 200g of chicken liver in the composition, this for those who love chicken liver, I failed to put it because I did not buy, next time I certainly do not forget about it because we like chicken liver . The recipe is from Jekin Kaprik's blog, which I discovered soon and where I will definitely try recipes because it is very good for my taste.

Turkey meatballs or baked chicken

  • 600g minced turkey or chicken
  • 1 egg tied
  • 300g zucchini
  • 1 small onion
  • 3-4 cloves of garlic
  • 2 tablespoons wholemeal flour
  • 2 tablespoons breadcrumbs
  • 1 tablespoon olive oil
  • salt pepper,
  • 1/2 teaspoon dried oregano
  • 1 teaspoon chopped green parsley
  • 1 nutmeg knife tip
  • 20g parmesan

Preheat the oven to 180 degrees Celsius. You may have noticed that quite often I write that the first stage is the preheating of the oven, because until it reaches the desired temperature we prepare the composition.

I recommend using minced meat from the thighs because it has a different texture, but if you can't find it, you can also use the minced breast, it behaves well.

So wash the zucchini well and grate it if it is tender with the peel on the grater with large holes. Squeeze it with water, insist only a little squeezed and then put it in a bowl with the minced meat, finely chopped onion and garlic, beech, breadcrumbs, egg and the rest of the ingredients. You can also add a little hot paprika or chilli flakes if you like to eat more spicy.

Mix well and with a wet hand form round balls that you put in the tray lined with baking paper. Press each one with your hand to flatten them a little. You can shape them small if you want.

Bake the meatballs for 35 minutes, after the first 15 minutes turn them on the other side. This stage is not mandatory, I followed the recipe but you can simply let them bake for 35 minutes.

Take out the tray, take them out in a bowl and serve them with whatever salad you want, vegetables, puree, rice, tzatziki sauce.

I boiled the chicken breast very well, then left it to cool. I chopped the carrot, onion and parsnip in a chopper, then I smothered them in a little water with a teaspoon of olive oil. After they have softened, we put them aside to cool.

The boiled and cooled chicken breast, I chopped it in the chopper together with the greens and the garlic clove. Over it add the vegetables, egg, spices and tablespoon of flour. Mix all the ingredients well until you get a homogeneous composition.

We take a little of the composition, put it in breadcrumbs and form the meatball in the palm, then we place them nicely in a tray lined with baking paper and sprinkle them with a little olive oil. Put the meatballs in the preheated oven at 180 degrees C, 15 minutes on each side.

Today's recipe is about chicken meatballs with vegetables. I have long since given up eating meatballs fried in oil, so the ones I propose are cooked in the oven, in a tray lined with baking paper.

The list of ingredients looks something like this:

  • 250 g minced chicken (I prefer to chop boneless leg at home)
  • 2 medium potatoes
  • 1 small carrot
  • 2 cloves of garlic
  • 1 or

  • optional (2+): salt and pepper
  • I peeled the potatoes and grate them finely. I then squeezed the grated potatoes with the liquid.
  • I cleaned and finely grated the carrots and garlic.
  • I prepared a tray in advance, on the bottom of which I put baking paper.
  • In a bowl I thoroughly mixed all the ingredients. I formed balls from the obtained composition by hand and placed them elegantly in the tray.
  • The meatballs sat in the preheated oven for about 30 minutes.

You can serve them with a salad of vegetables, a mix of cooked vegetables or a fine puree.

Chicken breast meatballs are delicious and have the advantage of being lighter.

Made in the oven, not being fried, they can also be eaten by younger children.

We need:
about 500 g chicken breast
2 onions
5-6 cloves of large garlic
1 pepper (optional)
2 eggs
2 large slices of bread
dill and parsley, salt, pepper

How come:
They are given through the mincer: chicken breast, onion, pepper and bread (I put it soaked so that the composition is not too watery).
The resulting mixture is mixed with eggs, crushed garlic, greens, salt and pepper.

Make suitable balls that are placed in the tray on baking paper and put in the hot oven for about 40-50 minutes.

A recipe for baked chicken meatballs from: bread, milk, bacon, onion, garlic, extra virgin olive oil, egg, chicken, tomato paste and parsley leaves.


  • 3 slices of bread broken into small pieces
  • 1/3 cup milk
  • 3 slices of pancetta / bacon
  • 1 small onion, finely chopped
  • 1 clove of minced garlic
  • 2 tablespoons extra virgin olive oil, divided
  • 1 egg tied
  • 1 kg chicken
  • 2 tablespoons tomato paste
  • 3 tablespoons parsley leaves

Method of preparation:

Preheat the oven. Soak the bread in milk in a small bowl for about four minutes.

Cook onion, pancetta or bacon and garlic in oil with 1/2 teaspoon salt and pepper in a large skillet over medium heat until onion is soft, about 6 minutes.

Squeeze the bread to remove excess milk, then discard the milk.

Lightly beat the egg in a large bowl, then add the chicken, 1 tablespoon tomato paste, pancetta mixture, bread and parsley. Form meatballs and place in the oven tray

Mix the remaining tomato paste and oil, then grease the meatballs and leave in the oven for 15-20 minutes.

3. In the second portion of mince, add bread and turn on the blender for 10-15 seconds.

4. In the chopped bowl, add black pepper, garlic, dill and salt. Mix well and beat the chopped dish, especially if you used the meat grinder, until it becomes viscous.

5. Pass the frozen butter through the medium grater, add it to the mince and mix with a spatula or fork, but not with your hands, so that the butter does not melt.

6. Shape the meatballs of 90-95 gr each, pass them through the flour, place them in the form lined with baking paper and sprinkle them with olive oil or grease them with vegetable oil.

Advice. The thin layer of breadcrumbs will keep the juiciness inside the meatballs.

7. Shape in a preheated oven for 25 minutes + 5 minutes on the grill.

8. You can also fry the meatballs on the pan with oil over medium to low heat for 2 minutes on one side, then turn them over, cover the pan with a lid, make a low heat and cook for another 8 minutes.

9. Remove the fried meatballs in a saucepan, put the lid on and leave for 5-10 minutes.

The meatballs are reddish and very juicy inside, both fried and baked.
